For this Why Ag Wednesday, we will be highlighting one of the crops that Michigan ranks first in the nation for, cucumbers for pickling!
Michigan is known for its well-drained, sandy soils which makes it perfect for growing cucumbers for pickling. Michigan produces 68 million pounds of cucumbers totaling 236,700 tons.
Michigan cucumbers are not only good for the industry but they also benefit the consumer! Cucumbers are a very good source of vitamins A and C and the mineral molybdenum. They’re rich in potassium, magnesium, manganese, folate, and dietary fiber.
